It’s spot prawn season…
This dish is easy, delicious, packed full of nutrients, and comes together in almost no time. Great for a weeknight dinner, or even for a casual dinner party. I love fresh bowls in the summer, and they’re also an easy pack for a day at the beach or park.
This makes use of our Ginger & Garlic Prawns (what I call Utility Prawns because they work up and down the lineup).
If you don’t have oranges you can use grapefruit or pineapple. Try Edamame for some fresh crunch. Pickled ginger, bean sprouts, pea shoots, sweet peppers, Jalapenos, and snap peas are all great substitutes and additions. The point is to layer in flavours and let people mix for themselves while they eat.
The added mayo keeps everything moist and adds a bit of umami.

Notes
You can substitute quinoa with rice, obviously, but we like the quinoa for the health benefits. Fruits and vegetables can be switched up with what you have on hand - try pineapple, mango, or grapefruit, edemame, or sugar snap peas. Pea shoots, lemon grass, and fresh chives can also make great toppings.
